Nana's Muffins

A family recipe, these muffins taste amazing with or without ice cream.

This recipe can be turned into nearly anything! Some filling suggestions:

  • Apricot and 1 tsp of cinnamon
  • Apple pieces (1 large apple) and 1/2 cup sultanas
  • Blueberries (1 cup)
  • Cherries and 1/2 cup coconut
  • Bananas (2 large) mashed. Optionally, add 1/2 cup choc chips
  • Pear pieces and 1/2 cup glacé ginger
  • Pineapple and chocolate bits (3/4 cup)
  • Jam 3/4 cup
  • Vanilla extract and chocolate chips
  • Carrot (1 large, grated) and 1/2 teaspoon each of cinnamon and nutmeg

  1. Preheat oven to 200°C (390°F).
  2. Melt butter in large bowl. Add egg and lightly beat, then add milk.
  3. Sift in flour and baking powder, then add sugar.
  4. Mix the ingredients, then add filling, stirring until just combined.
  5. Bake for 30 minutes, or until golden brown.
