Anzac Biscuits

A traditional Australian biscuit, these are buttery pieces of delicious

Crispy or chewy, they’re good either way! Adjust baking time accordingly.

  1. Preheat oven to 180°C (350°F).
  2. Combine oats, coconut, flour, and sugar in a large bowl. Mix thoroughly, forming a well in the centre.
  3. Place butter, golden syrup, and 1/4 cup of cold water in a saucepan, over a medium heat. Cook for several minutes, or until butter has melted.
  4. Stir bicarbonate of soda into butter mixture. Stir butter mixture into oat mixture.
  5. Roll mixture into balls, each approximately one tablespoon in size. Place on a tray, then flatten each by hand.
  6. Bake for 15 minutes, or until golden. Stand on trays for 5 minutes, then transfer to a wire rack to cool.
