Pavlova

A traditional Aussie dessert, this recipe is bound to please.

Kiwi fruit and strawberries are our family’s traditional fruit, but passionfruit, mango, blueberries and bananas are also common. Add vanilla and a tablespoon of sugar to the cream before whipping for an extra sweet treat.

  1. Preheat oven to 120°C (250°F) and line a baking tray with baking paper.
  2. Using an electric mixer, beat eggwhites in a large bowl until soft peaks form.
  3. Add sugar, 1/4 cup at a time, beating well after each addition. Beat for 10 additional minutes, or until sugar has dissolved.
  4. Spoon meringue onto baking paper in the shape of a circle, 24cm in diameter. Bake for 1 to 1 1/2 hours, or until dry and crisp. Cool in oven.
  5. Whip cream. Top pavlova with cream and fruit. Serve.
