Chocolate Cake for Two

Perfect for those days when you just need some chocolate

Dust with icing sugar and decorate with chocolate sauce for a fancier touch.

  1. Preheat oven to 160°C (320°F).
  2. Place sugar, milk, and butter in a large saucepan. Sift cocoa and bicarbonate of soda over mixture. Place over a medium-low heat and use a whisk to stir until smooth. Remove pan from heat and set aside to cool for 5 min.
  3. Sift flour into pan, again whisking until smooth. Add egg white and stir until well combined.
  4. Pour into a small non-stick cake or muffin pan. Gently tap pan on bench to remove air bubbles. Bake for 25 minutes, or until a skewer inserted comes out clean. Set aside for 2 min, before serving.
