- Preheat oven to 200°C (400°F).
- Cut ribs into four parts, then place in a roasting pan and bake for 20 minutes, turning once.
- Cook and mash potatoes. Mix potato, milk, butter and 125g of cheese (reserving 50g for garnish) together. Spoon into a well-greased muffin pan. Top with remaining cheese.
- Crush garlic, then mix with maple syrup, tomato purée, lemon juice and mustard.
- Drain fat from roasting pan, and pour sauce over ribs.
- Reduce oven to 180°C (350°F). Cook potato cakes and ribs for a further 30 minutes, until potato is golden, and ribs are tender and glazed.
