Maple Ribs

This unsual combination is surprisingly delicious and wonderfully filling.

Add a selection of vegetables for a full home-cooked meal.

  1. Preheat oven to 200°C (400°F).
  2. Cut ribs into four parts, then place in a roasting pan and bake for 20 minutes, turning once.
  3. Cook and mash potatoes. Mix potato, milk, butter and 125g of cheese (reserving 50g for garnish) together. Spoon into a well-greased muffin pan. Top with remaining cheese.
  4. Crush garlic, then mix with maple syrup, tomato purée, lemon juice and mustard.
  5. Drain fat from roasting pan, and pour sauce over ribs.
  6. Reduce oven to 180°C (350°F). Cook potato cakes and ribs for a further 30 minutes, until potato is golden, and ribs are tender and glazed.
